I know, I know - $42 ain't chicken feed. And this wine was far less costly just last year. But rising demand eventually takes its toll, dictating that prices rise to enforce the "X pattern" in the charts we puzzled over in Econ 101.
With 10% Merlot and 10% Cabernet Franc blended into this Cabernet, this wine is more complex than many of its ilk. All the desired Cabernet characteristics - ripe berry, tobacco, wood pencil shavings, and just a hint of pepper - plus the benefits of the two main blending grapes of Bordeaux - result in a bigger nose and a softer mouth feel, bigger fruit and floral notes, a trace of peppers, and a hint of cigar box cedar that will amplify over time.
All Cass wines are estate wines, meaning all the fruit comes from vineyards owned by the winery. Estate wines are fairly rare in California, where grapes are more commonly purchased (either under contract or on the open market) and then vinified by a winemaker.
Drink this wine with standing rib roast, crusty pan-seared Rib-eye steak, or glazed beef with a Bourbon-Roquefort sauce.
