Vineyard Information
More than any other wine we produce, the No-Oak Chardonnay is a transparent expression of grape quality and vineyard site, and as such demands only the most pristine, perfect fruit. Several clones of Chardonnay from several distinct sections of our Tolosa Estate vineyards came into play as the basic building blocks for this cuvée. Particular attention was paid to vineyard sites that produce rich, ripe varietal flavor at lower Brix, keeping resultant alcohol levels in balance with the opulent fruit flavors.
Winemaking & Cellar Information
We fine-tuned a gentle pressing regime specifically for the No-Oak program, obtaining low yields (~120 gallons / ton) and delivering high quality juice to the stainless steel fermentation tanks. Temperatures were kept very cool, prolonging the fermentation and retaining high levels of aromatic esters in the wine. We conducted a clean malolactic fermentation in several lots (about 40%) to temper the high levels of malic acid present in the very late 2006 vintage, while still maintaining a vibrant balance of acidity and minerality. We performed lees stirring frequently throughout the seven months in tank, serving both to protect the wine from oxidation and to release further aromatic and textural components into the wine. We chose to bottle with the high quality Stelvin closure, ensuring that the wine will reach your dinner table with all of the aroma and beauty that were present when we bottled it.

Tasting Notes
A pure expression of Chardonnay, with lime blossom, ripe peach and tangerine fruit layered over a core of cool-climate minerality. Beautiful weight and richness, balanced by elegant, crisp acidity, and a touch of sweet anise on the finish. We especially love this wine with all manner of shellfish: Dungeness crab, red abalone, diver scallops, Pacific oysters; all in the simplest of preparations.
