2005 Estate Grown TOLOSA Sauvignon Blanc
Varietal Composition:
100% Edna Ranch Sauvignon Blanc
Appellation:Edna Valley
Production:704 cases
Vineyard Information
The Salaal Vineyard of Edna Ranch is planted to both Clone 1 and the Musqué clone of Sauvignon Blanc. Making use of both clones lends interest and complexity to the palate. Care must be taken in the vineyard throughout the season to provide proper sunlight exposure to the fruit to properly develop the intense aromatics, without excessive vegetative character.
Winemaking & Cellar Information
Harvesting by hand early in the morning and rushing the fruit to press minimized oxidative breakdown of the aroma components that make Sauvignon Blanc so interesting as a varietal. Light, gentle pressing, and early press cuts were crucial to bringing only the highest quality juice to the fermentor. We utilized both cold fermentation in tank (55° – 57°F) and barrel fermentation in small stainless steel barrels (~65°F) to develop complimentary aromas and textures. Aged sur-lees for 6 months, with periodic stirring.

Tasting Notes
Definitely New World in style, we are justly proud of this year’s bottling. Flamboyantly aromatic, showing a whole spectrum of exotic fruit, floral, and fresh herb notes: lime blossom, passion fruit, even lemon-thyme and cut basil. Rich fruitiness and balancing acidity, with layered flavors of kumquat, pineapple and kiwi.
