Tasting Notes: The color is shiny light salmon with some gold. The nose is filled with fresh fruit of ripe lemons with a wonderful combination of gooseberry and strawberry. The mouth-feel is vibrant with very clean and crisp fruits of ripe apples with some orange, fine lime notes and great minerality. The finish is elegant yet playful and goes on for quite a long time. This is another classic Wolffer Rose, dry, light and very refreshing but rich enough to make it a great companion with food. Technical Notes: 35% Merlot, 8% Cabernet Franc, 17% Cab. Sauvignon and 40% Chardonnay. 2007 was an ideal growing season, with plenty of sun, moderate rain and perfectly healthy grapes. We specially select different blocks of our vineyards for this Rose. The fruit was hand harvested starting September 26th with Merlot and Cabernet Franc and finishing on October 13th with the Chardonnay and Cabernet Sauvignon. The crop level varied from 3.0 tons to 4.0 tons per acre. None of the varieties stayed on the skins and were gently pressed off. The juice for all lots was well settled at 50° Fahrenheit followed by a cool fermentation temperature of 66° Fahrenheit to total dryness. Aged in stainless steel after blending, Malolactic fermentation was strictly avoided to keep the lively acidity and pure fruit characters. 4012 cases were bottled in February of 2008. Serving Suggestions: Serve chilled. This exciting wine is so versatile that it will match well with practically any food. It pairs especially well with hors doeuvres such as smoked salmon, lobster, shrimp, marinated meat, and soft cheeses. At Thanksgiving time it is the perfect match with Turkey.
