Seductively aromatic and full of mountain minerality, the 2007 Viognier reflects both the onset of drought conditions and the chalky, limestone soils of its elevated Westside Paso Robles site. Cooler conditions pushed back the harvest almost a full month, contributing low yields of small yellow-golden grape clusters. Revered by pre revolution French nobility for its heady sensual bouquet, the capricious Viognier demands a steady hand to capture the contrast of its rich texture and balancing natural acidity.
Time sensitive winemaking is in order here, as the ideal ripeness opens a small window for harvesting the most expressive and balanced flavors. Hand harvested and sorted, the best fruit is whole cluster pressed, allowing the juice to settle overnight, followed by fermentation in neutral (previously used) French oak barrels. Secondary malo-lactic fermentation was held to about 65% to maintain a crisp edge to the luscious fruit and the wine remained in barrel for 10 months on its lees.
A bright mélange of peach blossom and melon aromas begin the procession of sensations leading to a rich, honeyed mouthfeel and ripe apricot flavors; these revealing impressions venture to a brisk citrusy finish. Best enjoyed within 2 years from release.
