The Dysphagia Cookbook is an unusual cookbook for anyone whose eating options are limited by chewing and swallowing difficulties. This book provides the opportunity to restore the joy and dignity of eating to those whose pleasure in the area has been limited. Salmon Pate
"To make the casing, combine the mustard, butter, lemon juice, garlic salt, pepper and dill. Melt slightly in the microwave. Place the salmon, skin side down, on a piece of aluminum foil and cover with mustard casing, reserving some for the dip. Bake in a small toaster at 350 degrees until fork tender, about 30 minutes. Remove the skin (it will stick tothe foil). In a medium bowl mix the salmon, cream cheese, Tabasco sauce, and reserve leftover casing mix with a fork until creamy. Serve as a dip with crackers. Makes about 2 cups."
What we like best about this book:
The recipes sound delicious and interesting -- not the typical puree or baby food entrees. Meals can still be wonderful, even in the face of swallowing difficulties.
