Our port is produced in the traditional manner, beginning with th use of five Portuguese grape varietals – Touriga Nacional 35%, Tinta Cao 25%, Tinta Roriz 15%, Tinta Amerela 15% and Souzao 10%. The fruit was harvested at perfect ripeness to accentuate the aromatics and balance of each varietal, and traditional production techniques were utilized, including foot crushing and hand punch-downs. After fortification with “aguardiente” at 160 proof, the blend is aged an average of three years in traditional oak uprights of neutral character. The residual sugar measures just below 10% and the final product is 18% alcohol, the fortification supports the fruit, rather than dominating it. Enjoy this ruby port with a sotf triple cream cheese or stilton and walnuts. Divine!
