Tank fermentation at low temperatures allows us to slow the fermentation process to preserve fruit flavors and aromas. We stop the fermentations with just enough residual sugar to emphasize and balance the crisp acidity. TASTING NOTES: Semi-sweet in style, this Muscat has floral aromas and tropical fruit flavors of melon, citrus and pineapple with a slight minerality. Stainless steel fermentation gives the wine a brightness that makes it excellent in hot summer months or as an accompaniment to light desserts, cheese plates or even fruit salad. Or pair with exotic spices such as Asian or Indian cuisines. VINTAGE: A dry winter led to a fairly early bud break in 2007. Overall the growing season was evenly paced with a just a few heat spikes in the early summer. Warm August weather started harvest early, but then a cool September slowed things quite a bit and grapes hung on the vines another few weeks. This cool period helped to develop complexity in flavors while keeping sugars under control. 2007 was one of the longest harvests Sonoma County has seen in recent years, spanning almost three months from start to finish.
