Grapes are allowed to ripen to physiological ripeness to ensure peak flavors and structure. After harvest the grapes are 100% de-stemmed and crushed. Once fermentation commences the wine is gently pressed and placed into a variety of new and old French oak barrels including Rémond and Seguin Moreau barrels from various forests.
