Tasting Notes:
Appearance: rich, deep, vibrant garnet color
Aroma: hint of tasty oak, rich forest floor, hint of bread yeast, nuances of violet and dried rose petals
Mouth: cocoa, dark chocolate, dark red fruits of plums and blackberries, smooth forward entry with a lovely galloping attack, sweet fruit a the front of the mouth, balanced acid, mild tannins, long lingering finish with dark plum overtones.
Because we spend so much time searching for the perfect fruit, our winemaker, Paul Hobbs, takes great care in producing our Pinot Noir and Cabernet Sauvignon.
All of our vineyards are cultivated to Paul’s specifications, with fruit dropped periodically throughout the growing season to ensure even ripeness and good concentration.
Paul picks our grapes only when they are at their peak and harvests on a row-by-row basis depending on when each row is ripe. He then hand-sorts the grapes on sorting tables, removing any unripe clusters.
Our wines are aged in French oak barrels, primarily new and none more than one year old. Paul never fines or filters and uses only native yeast fermentation.
