“Wagyu” is a term that means Japanese beef while “Akaushi”
is the Japanese term for Red Cattle.
The pure-bred Akaushi are a national treasure and are the
only free grazing cattle in Japan, roaming the sacred mountain of Aso where
they are protected by the Japanese government.
Through a loophole in the Trade Act of 1992, three bulls and
eight cows left Japan in a custom equipped Boeing 747 with armed guards closing
the loophole and allowing for Akaushi to be raised in the heartland of Texas,
here in America.
Since the eleven Akaushi left Japan in 1994 their herd has
blossomed to over five thousand with the help of off-duty Texas rangers who
spent twelve years monitoring the rearing of these cattle.
There is only one farm in all of America that is raising the
Akaushi beef that can be traced back forty generations.
The high percentage of intramuscular fat lends itself to the
most intense marbling of any piece of meat you will ever come across providing
an unmatchable flavor that ultimately sells itself.
Akaushi beef has also been proven to have a lower level of
cholesterol than fish.
