Highland Cattle are the oldest registered breed of cattle, officially recognized in 1884. The Queen of England maintains her own Highlands at Balmoral Castle. A group of this docile but very strong breed is the only kind of cattle not known as a herd but rather a “fold”. Cold weather and snow have little effect on them so they can be raised as far north as Alaska and the Scandinavian countries. They are hard workers and can clear brush with speed and efficiency. Their meat is lean, well marbled and flavorful. Our Highlands are raised by John and Dorothy Priske in Wisconsin.
