About Thompson Vineyard : The Thompson Vineyard is located in Los Alamos on Alisos Canyon Road. This vineyard first produced fruit in 1994 and was the source of grapes for the first Jaffurs Syrah. The vineyard has great drainage and much of the Syrah was planted on it's own rootstock. The Estrella Syrah clone continues to be one of our favorites.
2007 Thompson Vineyard Syrah
The 2007 Thompson Vineyard Syrah, has gripping tannin, powerful fruit forward flavors. More tannic than in 2006, it has flavors of spiced candy cherries with hints of sweet tar and tobacco. Cedar and chocolate mint aromas are beginning to emerge. It has Thompson’s classic candy quality that clings to your glass and sticks to your lips. Made using two new French, two new American and older barrels. (344 cases produced)
• This wine is 100% Syrah from the rolling hills of Thompson Vineyard in Los Alamos.
• Thompson Vineyard Syrah harvested October 12 th at 25.1 brix, 3.5 pH, 2.9 TPA
• The fruit was stemmed but not crushed. Intact, whole berries were placed in small bin boxes for 14 days of fermentation after a two-day cold soak.
• Inoculated with wild, Williams-Selyem, D254, and RC 212 yeasts.
• This wine represents fourteen choice barrels selected out of a total lot of eighteen.
• Went through ML fermentation, completing in January.
• Racked in July into neutral barrels, and again before bottling.
• Unfined and unfiltered.
• 18 months barrel age.
• Hard-candy-fruit flavors. Big and dark. Big tannin. Will soften. Tobacco-cedar-spice-mint notes. Big back of mouth tannins.
• Sticks to your lips.
• Bottled March 2009.
Food Pairing: This is a highly flavored wine which works well with similarly flavorful food. Try dark sauces, even some with dark fruit. Makes a great reduction sauce. Try spiced or BBQ pork, lamb, or beef. Slow roasted short-ribs in syrah reduction cannot be beat. Seared, spiced Ahi is a favorite, as is smoked salmon.
