<H1>Blackberry Cheesecake Bars -- Rustlin' Rob's Texas Gourmet Foods Shopping Cart</H1> $0.00 Blackberry Cheesecake Bars Shortbread Base: 3/4 Cup unsalted butter 2 Cups all-purpose flour 1/2 cup packed light brown sugar 1/2 tsp. salt Preheat oven to 350º. Cut butter into ½ -inch pieces. In a food processor (you can use a blender or do it the good old-fashioned way: mix it with a spoon and a lot of elbow grease!), process all ingredients until mixture begins to form small lumps. Sprinkle mixture into a 13x9x2-inch baking pan and with a metal spatula press evenly onto bottom. Bake shortbread in middle of oven until golden, about 20 minutes. While shortbread is baking, prepare topping. Topping: 16 oz. cream cheese, softened 2 large eggs 3/4 Cup sugar 1 tsp. vanilla 3/4 Cup Rustlin' Rob's No Sugar Added Blackberry Preserves In a bowl, whisk cream cheese until smooth. Whisk in eggs, sugar, and vanilla. Evenly spread Rustlin' Rob's Blackberry Preserves over hot shortbread and pour cream cheese mixture over it. Bake in middle of oven until slightly puffed, about 30 minutes. Cool completely in pan and cut into 24 bars. Keep  cookies covered and referigerated.
