8 Granny Smith apples in 1/2" slices
1 1/2 pounds chicken tenders (thawed, if previously frozen)
1 8 oz jar Texas Plum Line Green Chili Wild Plum Conserve
1 12 oz jar of Pepper Belly's Marinated Mushrooms w/ Roasted Garlic
1 large red onion sliced into rings (if desired)
Preheat oven to 350 degrees F. Spread apple slices evenly over the bottom of a 9x13 inch glass baking dish and cover with 2 cups water. Place chicken tenders on top of the apples and pour those wonderful Pepper Belly's Marinated Mushrooms over the chicken. In a bowl, warm the plum conserve briefly in the microwave and whisk so it is easy to pour. Pour the conserve evenly over the chicken and mushrooms. Spread the red onion rings over the whole delicious concoction (if desired). Cook until chicken is done (juices will run clear) about 1 hour.
Try it served over rice.
