Braised Garlic Sauce :
26 Lg. Garlic cloves, peeled, left whole.
1 cup chicken stock
1 tsp. Plus ¼ cup olive oil
¼ tsp. Hot red pepper flakes
Salt
Freshly ground black pepper
1 cup fresh flat-leaf parsley, chopped
¼ cup freshly grated Romano or Parmesan cheese, plus extra for serving
Place garlic, chicken stock, and 1 teaspoon oil in large nonstick skillet; bring to a boil over medium and simmer, uncovered, for 15 to 20 minutes or until garlic is tender and caramelized and just a little liquid remains. Add scant ¼ cup oil, red pepper flakes, salt and pepper; cook for 1 minute or until heated through. Add drained hot pasta to pan, sprinkle with parsley and cheese, and toss until combined. Serve with extra cheese. Serves 2 to 4.
