Spring Blending Camp March 14-16, 2010
Springtime in the Napa Valley is enchanting. The high tourist season is over and it's quite peaceful in the vineyards. Learn about the complex sparkling wine-making process, meet new friends and have fun being a part of it all.
Sunday Night
Enjoy a sparkling wine reception and dinner in the historic Schramsberg caves prepared by one of the valley's fine chefs.
Monday
- Breakfast at the Culinary Institute of America at Greystone (CIA).
- Prune one of our vineyards with Winemakers Hugh Davies, Keith Hock and Sean Thompson.
- Learn how vineyard location, soil content, viticultural practices, and clonal selection play a critical part in creating the complex flavors in Schramsberg wines.
- Tour Schramsberg and taste juice from the tanks.
- Begin the preliminary base-wine tasting of Chardonnay and Pinot Noir - a sampling of the 200 lots used in this year's final blend.
- Lunch at the CIA.
- A full afternoon of food and sparkling wine pairing under the direction of Holly Peterson at the CIA tasting facilities. Basic to advanced component tastings.
- Finish the day with an optional reception and dinner at the CIA's award-winning Wine Spectator restaurant ($95 per person in addition to the camp fee).
Tuesday
- Breakfast at the CIA
- Complete the secondary base wine tasting and formulate your own special blend.
- Learn how base wines are selected for the various Schramsberg final blends.
- Play honorary riddler - learning the essential moves required for achieving absolute clarity after the secondary fermentation.
- Taste a vertical of finished Schramsberg wines.
- Lunch at the CIA with international food and sparkling wine pairings prepared by the CIA chefs to illustrate the way foods can complement and contrast the wine flavors.
- Participate in Team sparkling wine menu creation contest and judging.
- Learn how to use a sword to saber a bottle of sparkling wine.
- You will graduate with a sparkling wine reception. Menu contest prizes will be awarded.
Fee for Camp Schramsberg program - $1,100 per person. Lodging is not included. A recommended lodging list is available by request.
