Fall Harvest Camp September 13-15, 2009
There is nothing like the harvest season in the Napa Valley. Now it's your turn to get in on the heart of the action. Harvest grapes and learn about the complex sparkling wine-making process. Meet new friends and have fun being a part of it all.
Sunday Night
Enjoy a sparkling wine reception and dinner in our estate vineyard prepared by one of the valley's fine chefs. This is your orientation and will prepare you for the days ahead.
Monday
- Breakfast at the Culinary Institute of America at Greystone (CIA).
- Harvest grapes with Winemakers Hugh Davies, Keith Hock, and Sean Thompson.
- Learn how vineyard location, soil content, viticultural practices, and clonal selection play a critical part in creating the complex flavors in Schramsberg wines.
- Tour Schramsberg and taste freshly pressed juice from the tanks - a sampling of the 200 lots used in this year's blend.
- Buffet lunch prepared by the students at the CIA.
- A full afternoon of food and sparkling wine pairing under the direction of Holly Peterson at the CIA tasting facilities. Holly will guide you through basic to advanced component tastings.
- Finish the day with an optional reception and dinner at the CIA's award-winning Wine Spectator restaurant ($95 per person in addition to the camp fee).
Tuesday
- Breakfast at the CIA
- Tour of Schramsberg's historic caves, riddling demonstration.
- Create your own special sparkling wine through the process of disgorging, choosing your own dosage, corking and labeling.
- Taste a vertical of finished Schramsberg wines.
- For lunch, we'll offer a food and sparkling wine tasting with delicacies prepared by the CIA chefs to illustrate the way foods can complement and contrast wine flavors.
- Participate in a team sparkling wine menu creation contest and judging.
- Learn how to use a sword to saber a bottle of sparkling wine.
- You will graduate with a sparkling wine reception and celebration featuring additional pairings prepared by the CIA chefs. We'll award prizes for the best menus and mingle with your fellow graduates.
Fee for Camp Schramsberg - $1,100 per person. Lodging is not included. A recommended lodging list is available by request.
