TASTING NOTES
The color is a light lemony yellow. Aromas show delicate touches of citrus fruit and white flowers. Flavors of toast with ripe pear, peach and gingerbread enhance the great delicacy of this wine which has astonishing aromatic freshness.
SERVING SUGGESTIONS: Excellent with grilled shrimp, salmon and artichokes, also butternut squash soup and pasta with browned butter sauce.
VINEYARDS
Three Languedoc terroir are featured in this wine: in the South-west Languedoc, gentle limestone slopes provide a bit of flintiness and elegance. The West, a late-ripening area with deep, silty clay and limestone soils produces lively, fruity wines. In the Central Languedoc, stony terraces in early-ripening areas provide flesh and structure to the wine.
VINE CULTIVATION
The vines are hard pruned and naturally lacking in vigour. To keep the grapes healthy and help them ripen well, the vines are debudded and the leaves thinned out to let in the light.
HARVEST & VINIFICATION
To ensure the aromas remain intact, the grapes are picked at night at ideal ripeness. Part of the must is fermented in barrels (half in new barrels and half in once-used barrels) and part in vats to preserve the original aromas of the grapes.
MATURATION
The wines were matured on the fermentation lees for 6 months in oak barrels to give them delicate flavors of toast and spice.
