TASTING NOTES
Lush hues of purple and dark red allude to a burst of blackcurrant and blueberry aromas. Flavors of black fruit, pepper and coriander give this fruity and concentrated wine rich character.

VINEYARDS
Two Languedoc terroirs are the source of this wine. The western Languedoc site has a temperate climate and very stony, chalky-clay soils producing very dense, aromatic wines. Slightly to the east are two vineyards in warmer climates: one chosen for its gravelly clay soil yielding structured wines with noticeable tannins and one of splintery limestone soil resulting in softer wines with coated tannins.
CULTIVATION METHODS
The vines are hard-pruned and naturally lacking in vigor. To keep the grapes healthy and help them ripen well, the vines are de-budded and the leaves thinned out to let in the light.
HARVEST & VINIFICATION
The grapes were picked at the peak of ripeness. They were carefully destemmed before undergoing lengthy maceration (5 weeks) at less than 27°C. Slow release of the elements in the grapes gives richness and fullness. This entirely natural process extracts tannins without harshness.
MATURATION
The wines were matured partly in new and one-year-old French oak barrels, and partly in vats to ensure the complexity of the final blend. The more highly structured batches were barrelled to soften and "coat" them without losing any of their strength and sweetness. The fruitier batches were vat-matured to retain their original fruit and were added to barrel-matured lots for the final blend.
