TASTING NOTES
Bold purple with plum-color tints. Initial aromas of fresh fruit develops into candied fruit delicately accented with "garrigue" herbs (thyme, rosemary), laurel and spicy olive. Supple and fresh flavors of candied fruit and licorice and smooth tannins lead to a mellow finish. Maison Bouachon Gigondas marries strength and generosity.
SERVING SUGGESTIONS: Firm, salty cheeses, wood-fired pizzas with roasted vegetables, carmelized onions and black olives
GIGONDAS
Called Montfort (hard mountain), this hardest part of Dentelles de Montmirail hills is made of granite, produced when the Alps collided. "Duc de Montfort" is produced from vines growing on middle terraces, an extremely sunny rocky plateau overhanging the left bank of the Ouvèze, on the western slopes of the Dentelles de Montmirail hills. Grapes benefit from warm, sunny days and cool, brisk nights.
GRAPE VARIETIES: Black Grenache (70 %) for mellow and generous fruit, Syrah (30 %) for structure, deep color and complexity.
WINEMAKING: Our winemaker carefully selects parcels looking for ideal exposure, slope and low-yield vines: old Grenache (70 years old) and younger Syrah (30-40 years old). Grapes are harvested by hand and rigorously sorted. Each grape variety is vinified separately after total de-stemming. Skin fermentation lasts for approximately 3 weeks with daily pump-overs.
MATURATION: We age this wine in French oak barrels for 12 months before blending. We keep the wine in bottles for several months in our cellar, at cool temperatures with no light before release.
