Aromas of blackberries, cherry and plum are accented by a hint of toasty vanilla. Flavors marry beauty and structure with notes of dried cranberry and almond. Rich and subtle tannins give fullness to this elegant and complex wine.<br><br> Ch&#226;teauneuf-du-Pape is the jewel and the roots of Maison Bouachon, established more than a century ago in the region of the summer papal residence.<br><br> SERVING SUGGESTIONS: Delicious with firm, salty cheeses, grilled sausages and tri-tip steak, also herb-crusted lamb chops<br><br> CHATEAUNEUF-DU-PAPE<br> This is the most important appellation in the Southern Rhone, producing rich, spicy, full-bodied wines. In the 14th century, when Popes moved from Rome to Avignon, they spent summers in Ch&#226;teauneuf du Pape, where still today there are ruins of the Popes&#8217; castle. Pope John XXII is credited with the planting of the first papal vineyard called Chateauneuf-du-Pape. In honor of this legacy, this wine name is "La Tiare du Pape" meaning the Pope&#8217;s Crown. <br><br> VINEYARDS<br> Several kilometers to the north of Avignon, on the rocky, sun-scorched hills and terraces swept by the Mistral, is the famous vineyard of Ch&#226;teauneuf-du-Pape. Plots which are harvested for La Tiare du Pape are closely monitored throughout the year by our vineyard manager and oenologist, respecting the unique schedule of local conditions. The soil is comprised of clay and limestone mixed with round quartz stones. The Alpine diluvium (quartz stones) have a heat-regulating effect: they store up the heat of the day and return it during the night, contributing to a special ripening effect. <br><br> GRAPE VARIETIES: From the 13 authorized grape varieties, 3 principle varieties are present: Grenache (60%), Syrah (30%) and Mourv&#232;dre (approximately 7%), and other typical grape varieties (making up 3%, such as Counoise, Terret noir, Muscardin and Vaccar&#232;se). <br><br> WINEMAKING: Selection of parcels is very important: old Grenache (70 years old) and younger Grenache (30-40 years old) with ideal exposures and low yields. Grapes are harvested by hand and rigorously sorted. Each grape variety is vinified separately after total de-stemming. Long fermentation (3-4 weeks) is done with frequent pump-overs and daily control (analysis-tasting). Temperature is controlled in order to afford the optimum extraction of color and aromas. <br><br> MATURATION<br> We age the wine in French oak barrels for 12 months before blending.
