Winemaker's Notes
Winemaker Dave Hickey begins the blending process each January following the harvest. Selecting wines from among the various sparkling lots of Pinot Noir, Chardonnay and Pinot Blanc, he formulates the base for this lovely wine. He then searches for just the right barrels of Estate Pinot Noir to impart the signature pale pink hue and complex flavors of our Rosé. This process combines the deep, rich flavors of our Pinot Noir with the vibrancy of our finest sparkling wines, delivering a lush bouquet of floral and berry notes. Refreshingly dry, this wine pairs wonderfully with food, a sunset or a backyard hammock.

Tasting Notes
This refreshing salmon-colored sparkling wine, with its floral and strawberry aromas, is pleasing to both the eyes and nose. Earthy richness of Pinot Noir marries with hints of soft melon. Undertones of citrus come through on the palate and leave with a clean, crisp finish.
The Pinot Noir, Chardonnay and Pinot Blanc grapes were hand harvested, whole cluster pressed and tank
fermented using champagne yeast. The wine is encouraged to undergo malolactic fermentation and then bottled
in the springtime, in the true Méthode Champenoise tradition. Laetitia targets 25 months en tirage for
our Brut Rosé program. To highlight our Pinot Noir fruit, a few barrels of dark and intense Pinot Noir were
chosen to be added to the blend. This wine was aged in mature French barrels, which allowed the wine to soften
gently while retaining its fruitiness.
