Just 13.1% alcohol - when was the last time you saw a California pinot with alcohol below 14%? In the eighties, I’ll bet, and I’m pleased to see it again. A subtle pinot like this is balanced by modest alcohol. Amp up the octane and you need bigger fruit to keep the scale even. And that’s just not what pinot is all about.
This wine is great now, though another year in the bottle will help meld the flavors even more, while allowing the talc-like tannins to calm a bit. Drink now through 2014.
About Tous Ensemble
This wine comes from three Anderson Valley vineyards – Cerise (located right next to Lila Farms, our olive orchard in Boonville, some 22 miles inland), Monument Tree and Wentzel. It highlights the purity of fruit, subtle earthiness and liveliness that typify Copain’s Anderson Valley wines.
Cheers!
This wine's fruit profile includes bright Bing Cherries with interesting layers of black tea and a spice profile that bring back memories of the morning air in a redwood forest. There is also some sweet pie spice in here, cinnamon, perhaps a touch of clove, and allspice.
Tous Ensemble is a series of top-quality, blended wines from some of the best vineyards in the Anderson Valley appellation. To be included in the series, the fruit must come from an organically farmed vineyard. Tous Ensemble wines are varietally correct, lower in alcohol, food friendly, and a tremendous value.
