Now that the Holiday Season is upon us, it's time to stock up on sparkling wine! Graham Beck has produced their Brut from grapes grown in the Robertson Valley of the Western Cape region of South Africa since 1991. A blend of 54% chardonnay and 46% pinot noir, this wine is made using the traditional Methode Champenoise, called Methode Cap Classique in South Africa. The two varieties are fermented separately, then blended together and bottled with a dose of yeast, causing a secondary fermentation that lasts two years before disgorgement. This dry sparkler shows a fine mousse with pale golden colors and aromas of fresh melon and pear with hints of yeast. With a rich and creamy complexity on the palate, it's excellent on its own or paired with seafood appetizers. ~ Darrell Scarlott
