Long Island, New York. Produced and bottled in Sagaponack, New York. Under Winemaker/Technical Director Roman Roth's meticulous care, Wölffer Estate Vineyard encompasses 55 acres and practices sustainable agriculture. Similar in many respects to conditions in Bordeaux, the local Bridgehampton loam soil, combined with the breeze from the Atlantic, only 2.6 miles away, provides the perfect conditions to achieve the ripeness and acidity necessary for producing Wölffer's signature style: European elegance combined with the typicity of their Long Island terroir.

Style/Taste
The color is dark red, with hints of brown. The nose offers vibrant blueberry, black berry jam and white pepper ,with fine vanilla and cedar notes. The elegant mouth-feel brings wonderful ripe fruit balanced by soft-layered tannins. The finish is smooth, with great notes of dark chocolate and fine acidity, making you yearn for the next sip or the next bite to eat. ~Roman Roth, Winemaker/Technical Director
Harvest
2006 was a great growing season for Cabernet Franc, bringing out vibrant fruit and soft tannins.
Technical Data
Hand picked between October 25th and 31st with careful selection in the vineyard and on our sorting table, the healthy grapes were destemmed. After a 3-day cold soak at 50F, the fermentation was done in stainless steel tanks, where the temperature rose to 86F. The cap was managed via pump over, 3 times a day during peak fermentation. The total maceration of 21 days was followed by gently transferring and pressing the grapes. After 10 days rough settling, the wine was moved into 20% new and 80% older French oak barriques, where Malolactic Fermentation finished 100%. The wine was carefully racked a total of 6 times during the maturation time of 16 months in French oak and an additional 5 months in stainless steel. Blended in July 2008, the wine was bottled unfiltered and unfined on August 26th 2008, resulting in 901 cases.

Serving
A great wine for the table. Serve slightly below room temperature. This wine is an excellent match with cheese, chicken, mushroom dishes and any red meat.
