Tasting Notes: Dark red brick in color. The aroma is amazing! Loaded with wild berries, fine strawberry, spices, sandalwood and toasted oak. The mouth-feel is rich and concentrated. Layers of ripe tannins are packed with ripe fruit of black cherries, cranberries and some prunes. The finish is long and very focused, underlining the great aging potential this wine has. I compare this vintage to our 1995, which was my favorite Pinot Noir up to now. Technical Notes: 100% Pinot Noir picked from 2 vineyards, one planted in 1993 the other in 2000. The harvest date was September 23rd for both vineyards. The yield was 2.3 tons/acre. Fermentation was done in a Stainless Steel Tank and in one 1-ton bin with 12% whole clusters. The cap was gently punched down 3 times a day during peak fermentation to extract color and flavors and the total maceration time (skin contact) lasted 18days for the 2 lots. After softly pressing the grapes and a 2-day settling of the yeast the wine was put into French oak barrels (20% new oak) to complete Malolactic fermentation and to age and mature for a total time of 18 months. The wine got a total of 4 rackings. Bottled unfined and unfiltered on February 15th only 224 cases were produced. Serving Suggestions: The wine will go well with Cheese, Veal, rich Chicken or Fish dishes and can even stand up to steak and Lamb.
