Winemaker's Notes
Shinny pale orange in color. The aroma is full with fresh lime, papaya and some raspberry and well-integrated lees notes. The mouth-feel is crisp, elegant, light and austere. Great fruit provides a soft middle while lip-smacking acidity and beautiful yeast notes ensure a vibrant finish. This wine would be called jargon "natural" in Champagne.
Technical Data
The 2008 growing season was perfect to develop intricate and subtle fruit ideal for Rose. Plenty of sun, moderate rain and our unique ocean influence brought fourth great ripeness as well as keeping good acidity. We specially selected different blocks for this Rose. The fruit was hand harvested on October 7th and was immediately pressed and did not stay at all on the skins. The juice was well settled at 50˚ Fahrenheit followed by a cool fermentation at 63° Fahrenheit. After 16 days, the wine was dry and gently moved into 8-year-old French Barrels, staying for 3.5 months on the lees with weekly lees stirrings (batonage). Malolactic fermentation was strictly avoided to keep the lively acidity and pure fruit characters.188 cases were bottled on April 3rd of 2009.
