Tasting Notes:
Dark red brick in color. The nose is elegant and subtle with fine hints of rose petals, cloves and mocha. The mouth-feel is medium bodied with wonderful spicy dried plums and toasty oak characters balanced by abundant fruit, red cherries and cassis with some earthy lees and mark (skin). The finish has well integrated tannins, mineral notes and fine hints of acidity making this a very classic Pinot Noir that is food friendly and not overloaded by lots of alcohol or oak.
Technical Notes:
100% Pinot Noir picked from 2 different blocks, one planted in 1993 the other in 2000. The harvest date was September 27th for the 2000 block and October 13th for the 1993 block.
The average yield was 2.1 tons/acre. Fermentation was done in 1-ton bins with 15% whole clusters. The cap was gently punched down 3 times a day during peak fermentation to extract color and flavors and the total maceration time (skin contact) lasted 11 and 14 days for the 2 lots. After softly pressing the grapes and a 5-day settling of the yeast the wine was put into French oak barrels (15% new oak) to complete malolactic fermentation and to mature for a total time of 15 months.
Bottled unfined and unfiltered on January 19th only 273 cases where produced.

This rich, traditionally made pinot noir is a truly versatile wine that pairs well with a variety of foods. Because of its elegant yet lush character and velvety tannins, it enhances the flavors of both meat and fish dishes and is a perennial favorite with salmon.
