Each of the Wölffer 20th Anniversary Wine Series was inspired by an opportunity to push the boundaries of Long Island winemaking, nurtured by Winemaker Roman Roth's profound understanding of the vineyard. Named for a champion horse from the Wölffer Stables, Noblesse Oblige is a 10-year-old Holsteiner warm blood.
Region
Long Island, New York. Produced and bottled in Sagaponack, New York. Under Winemaker/Technical Director Roman Roth's meticulous care, Wölffer Estate Vineyard encompasses 55 acres and practices sustainable agriculture. Similar in many respects to conditions in Bordeaux, the local Bridgehampton loam soil, combined with the breeze from the Atlantic, only 2.6 miles away, provides the perfect conditions to achieve the ripeness and acidity necessary for producing Wölffer's signature style: European elegance combined with the typicity of their Long Island terroir.

88% Pinot Noir, 10% Chardonnay, 2% Estate Selection Merlot 2007
Style/Taste
Light orange salmon in color and assertive with very fine beads of tiny bubbles. Aromas of crushed stones, ripe pears, and fresh lemons.
The wine is lush yet delicate, enriched by a beautiful mousse and notes of peach, fresh strawberries and lime. The crisp and focused finish goes on and on with wonderful nuttiness, yeast notes and minerality.

Technical Data
The grapes were carefully hand picked for this special sparkling wine. The Chardonnay was picked on September 27th from our oldest vineyard block (planted in 1988), Davis Clones 3 and 4. The Pinot Noir was picked on September 25th from our 1993 Block.
The grapes were gently handled and pressed as whole clusters. The juice was cold-settled at 40°Fahrenheit for 24hours, followed by a slow fermentation that was achieved by keeping the juice at cool temperatures (~ 66° Fahrenheit) in stainless steel tanks. Malolactic fermentation was strictly avoided to keep the lively acidity. The wine was blended and aged for 3 months sur lees prior to clarification and filtration. Our finest merlot was added before bottling to achieve an elegant pink color. Bottling was done on March 17th, 2005 and the wine then went through its second fermentation (Methode Champenoise).
After 45 months of aging in our dark cuvee room, it was hand-riddled and disgorged with a dosage of only 4.25 grams per liter, resulting in a limited number of 194 Magnum bottles.
Serving
This sparkling wine is an excellent accompaniment to food; matching especially well with Caviar, oysters, or any type of shellfish on the half-shell. It will also refresh the palate between spoonfuls of seafood bisque or other cream-based soups. And let's not forget - it makes the perfect toast for your special occasions.
