Long Island, New York. Produced and bottled in Sagaponack, New York. Under Winemaker/Technical Director Roman Roth's meticulous care, Wölffer Estate Vineyard encompasses 55 acres and practices sustainable agriculture. Similar in many respects to conditions in Bordeaux, the local Bridgehampton loam soil, combined with the breeze from the Atlantic, only 2.6 miles away, provides the perfect conditions to achieve the ripeness and acidity necessary for producing Wölffer's signature style: European elegance combined with the typicity of their Long Island terroir.
Grapes
89% Merlot, 10% Cabernet Franc, 1% Cabernet Sauvignon
Style/Taste
Dark red brick color. The nose is filled with warm, sun-drenched berry notes, blackberries and cassis with fine vanilla. The mouth-feel is medium-bodied, with great balance of ripe fruit and lush, well-integrated tannins. The wine is very classic with prune character, fine toasted oak, thyme, delicate licorice and a long, mineral finish. ~ Roman Roth, Winemaker/Technical Director
Harvest
The growing conditions on Long Island were perfect from summer to fall, resulting in dream numbers.
Technical Data
The grapes were carefully hand-harvested between October 16th and November 1st, followed by further selection on our sorting table. The Merlot grapes came from 3 different blocks. The grapes were destemmed and then fermented in stainless steel. The fermentation rose to 89F and the cap management was done via pump over, 3 times a day. The total maceration time was 23 days. Then we gently transferred and pressed the grapes, separating the press fraction. Following 14 days of lees settling, the wine was moved into 20% new and 80% older French oak barriques, where Malolactic Fermentation finished 100%. The wine was carefully racked a total of 5 times during the 12-month maturation. Bottled unfiltered and unfined on February 27th, 2008, 1062 cases were produced.
