Under Winemaker/Technical Director Roman Roth's meticulous care, W&#246;lffer Estate Vineyard encompasses 55 acres and practices sustainable agriculture. Similar in many respects to conditions in Bordeaux, the local Bridgehampton loam soil, combined with the breeze from the Atlantic, only 2.6 miles away, provides the perfect conditions to achieve the ripeness and acidity necessary for producing W&#246;lffer's signature style: European elegance combined with the typicity of their Long Island terroir. &nbsp;</div> <div>&nbsp;&nbsp;</div> <div>Grapes&nbsp;</div> <div>100% Chardonnay, Dijon Clone #76, planted in 1993&nbsp;</div> <div>&nbsp;&nbsp;</div> <div>Style/Taste&nbsp;</div> <div>Golden in color, reflecting the abundance of sunshine that these perfectly- positioned clusters received during the growing season.&nbsp;</div> <div>The rich, intense aroma is very classic with creme brulee, ripe peach and creamy lees notes.&nbsp;</div> <div>The mouth-feel is big, offering great concentration and liveliness. Loads of fruit and minerality with elegant acidity form the core of this wine, wrapped in well-integrated lees and toasted oak notes.&nbsp;</div> <div>The great balance and crisp long finish are very special and promise great longevity.&nbsp;</div> <div>This is one of my favorite wines at Wolffer Estate Vineyard.&nbsp;</div> <div>-- Roman Roth, Winemaker/Technical Director&nbsp;</div> <div>&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp; &nbsp;</div> <div>Harvest&nbsp; &nbsp;</div> <div>The 2006 growing season produced vibrant and lush fruit.&nbsp; Hand- harvested as late as possible without losing elegance, the grapes were picked on October 19, handled swiftly and gently. &nbsp;</div> <div>&nbsp;&nbsp;</div> <div>&nbsp;&nbsp;</div> <div>Technical Data&nbsp;&nbsp;&nbsp;&nbsp;&nbsp; &nbsp;</div> <div>The juice was well settled for 48hr at 50F, followed by a very clean racking. The juice fermented 100% in French barriques, of which 35% were new oak.&nbsp; Natural Malolactic Fermentation went through 85% and the wine stayed sur lees for a total of 6 months, with very little batonage.
