Tasting Notes:
Light yellow straw color. Beautiful nose filled with floral notes, white peaches and some honeycomb. The wine is medium bodied, starting off with classic flinty and mineraly notes that are backed up by lush fruit - peach, melons and some almond. The wine has wonderful structure that unfolds nicely on the pallet and goes into an elegant long finish, rich with great play between acidity, some skin characters and classic fine lees notes.
Technical Notes:
·88% Pinot Gris grown on the North Fork at Indian Neck Farm.
·12% Chardonnay Wolffer 88West Block Davis Clone 3.
The Pinot Gris was hand picked on September 22 with a small percentage of botrytis adding to the array of flavors. The yield was low at 2.1 tons per acre insuring that every cluster was exposed to the sun. The grapes were handled gently and pressed; the juice was chilled down to 50° and well settled followed by a cool fermentation (62°) in stainless steel for 12 days. At dryness the young wine was racked into 13-year-old French Puncheons (500 Ltr. Barrels) and aged sur lees for a total of 2 months.
Malolactic fermentation was completely avoided to keep the vibrancy and fruit forwardness. The wine was bottled at the end of February 2007 resulting in the exclusive number of only 233 cases.
Serving Suggestions:
Serve slightly chilled. The lush and spicy mouth-feel combined with the elegant acidity will enhance all fish and white meat dishes as well as match perfectly with Asian dishes.
