Tasting Notes: Golden in color with fine strings of beads, showing off the well-integrated bubbles. The wine is loaded with wonderfully clean and classic aromas of fine yeast, almonds, light toast and lots of fruit of ripe pear and apples. The mouth-feel is rich yet elegant with a beautiful mousse, fine roasted nuts and racy acidity. The wine is rich and concentrated with lively acidity making it age-worthy and a fabulous food wine.
Technical Notes: 59% Chardonnay, 41 % Pinot Noir After an ideal growing season which was not too hot, the grapes were carefully hand picked from 2 special lots designated for this sparkling. The Chardonnay was picked on September 27th from our oldest Block (planted in 1988) Davis Clone 3+4 and the Pinot Noir was picked on September 14th from our 1993 Block. Handling and pressing of the grapes was done with whole clusters and as gentle as possible. The juice was cold settled (40°Fahrenheit) followed by a slow fermentation that was achieved by keeping the juice at very cool temperatures (58° Fahrenheit) in stainless steel tanks. Malolactic fermentation was strictly avoided to keep the lively acidity and pure fruit. The wine was blended and aged for 4 months prior to clarification and filtration. It was bottled on the 18th of March 2005 and went through its second fermentation. (Methode Champenoise) After 31 months of aging in the dark cuvee room it was hand riddled and disgorged with a dosage of 7 grams per Liter (brut), ending up with 340 cases.
Serving Suggestions: This sparkling is an excellent accompaniment to food, it does match well with any type of chilled shellfish on the half-shell, especially oysters. It also acts to refresh the palette between spoonfuls of seafood bisque or other cream-based soups. And lets not forget – the perfect toast for your special occasions.
