Tasting Notes: Bright yellow/golden color.Floral aromas with lots of ripe pear, flintiness, and fine cedar fill the nose. The mouth-feel is light to medium bodied showing clean and crisp fruit, ripe peach, pear and even some nectarine. It is a very vibrant and balanced wine with beautiful acidity and elegant skin notes. This wine is a great statement as to how wonderful and refreshing Chardonnay can be. It is a fabulous wine to go with food. Technical Notes: 100% Chardonnay. The 2006 growing season was a great example of how special our location is to get tremendous long hang-time of the fruit. The harvest began October 3rd and lasted till November 11th. We separated 7 different parcels to capture the best fruit character of each. The fruit was immediately gently pressed and the juice was well settled at 50ºF up to 48hr, to highlight the vibrant fruit. 85% of the juice was fermented in stainless steel at cold temperatures (63ºF) and 15% fermented in barrels and aged for 2 months sur lees in new French oak. The wine underwent 35% malolactic fermentation and was blended after the 2 months and filtered. 2825 cases/750ml and 384 cases/375ml were bottled in August 2007. Serving Suggestions: The fresh and elegant fruit flavors and mouth-feel make this wine very food friendly and versatile to match with all kinds of foods, from Fish to Chinese and spicy Asian dishes. However it is screaming Oyster, Oysters and more Oysters.
