Tasting Notes: Black in color. The air is filled with Violets, Thyme, ripe plums, dried fruits, vanilla, fine cedar and hints of leather and tar. The mouth-feel is ripe, big and concentrated. Lush fruit is met by layers and layers of subtle tannins. The soft and fruit driven character of Merlot and particularly this vintage is well balanced by classic texture of ripe skin, toasted oak and minearlity. The Cabernet Franc is showing strong in the long juicy finish. This is a tremendous wine with great intensity without loosing its elegance. Technical Notes: 84% Merlot, 16% Cabernet. The best growing season we have ever experienced on Long Island finished very turbulent with the “perfect storm” (20inches of Rain in 8 days)! This set into motion a dehydration of the slightly bruised grapes that resulted in some of the best red wine Wolffer has ever made. The Harvest numbers where 22.6 Brix, 5.7 TA and 3.51 pH. Carefully hand harvested on the 17th of October 2005 and followed up by further selection on our sorting table. The grapes were destemmed and the fermentation was done in Stainless Steel. The fermentation went up to 88F and the cap management was done via Pump over, 3 times a day. The total maceration went on for 18 days and we gently transferred and pressed the grapes separating the press fraction. Following a 3 day rough settling the wine was moved into 30% new and 70% older barrique barrels. Malolactic Fermentation finished 100% and the wine was carefully racked a total of 5 times during the maturation time which lasted for 12month. The Alcohol is 13% by Volume. The wine was bottled unfiltered and un-fined on February 15th 2007 and resulted in 694 cases. Serving suggestions: Serve slightly below room temperature. It is a perfect partner with Pasta, Burgers, Steak, Classical stews or paella.
