Tasting Notes:
Clear and bright yellow/gold in color. The glass is filled with the aroma of ripe sweet fruit from fresh apples and flowers.The mouth-feel is elegant yet vibrant, fresh and clean with ripe apple notes and playful acidity making this apple wine zing.The finish is long, leaving a classic hard cider note behind softened by a touch of sweetness.
Technical Notes:
20% Ida Red, 18% Golden Delicious, 18% Fuji, 17% Jona Gold, 10% Empire, 8.5% Gold Rush, 8.5% Breaburn. Grown by the Halseys of White Cap Farm, the fresh pressed apple juice came from the above blend of apples of which each contributes a distict character. After pressing the apples on the 3rd of January 2007 at the White Cap farm in Bridgehampton, the juice was brought to the winery to start cold settling for 5 days. The juice got carefully racked and inoculated with the wine yeast Cote de Blanc to start the fermentation. The fermentation was done at a very cool temperature of 62 degrees and was stopped after 15 days to preserve some of the natural sugar by chilling the wine and by racking it of the yeast. Bottling was done on the 22nd of February resulting in 563 cases.
Serving Suggestions:
Best served chilled, our apple wine is wonderfully thirst quenching if mixed with sparkling water, and a great companion to antipasti and any other light fare.
In the kitchen it is a fabulous condiment for sauces and reductions.
