Tasting Notes: Light golden in color.Lush yet elegant aromas of pears, peaches, flintstone and fine toasted oak make this instantly a classic Wolffer Estate Selection. The mouth-feel is rich and vibrant. The fruit intensity seems almost sweet despite the wonderfully crisp and clean acidity and the great minerality.The wine has an amazing balance and the finish goes on forever leaving a beautiful creamy lees note.This wine is showing our Hampton Terroir at its best. A classic Chardonnay concentrated and elegant that can age for a long time. Technical Notes: 100% Chardonnay, Dijon Clone #76.The 2004 growing season was perfect to produce wines with great vibrancy and aromas. Hand harvested as late as possible without loosing elegance (on October 27th) the grapes were handled swiftly and gentle. The juice was settled for 24hr at 50F and a very clean racking followed. The juice fermented 100% in French barrique of which 25% was new oak. Natural Malolactic Fermentation went through 40% and the wine stayed sur lees for a total of 8month, with very little batonage.The wine was fined, filtered and bottled on August 10, 2005 resulting in 352cases. Serving Suggestions: Don’t serve this ice cold. (Below 54 degree Fahrenheit) This is a beautiful Chardonnay that shines on its own and is perfect for rich fish dishes, creamy flavorful chicken or veal, and of course an array of cheese. Make sure you keep at least one bottle for 10 years in your cellar.
