Each of the Wölffer 20th Anniversary Wine Series was inspired by an opportunity to push the boundaries of Long Island winemaking, nurtured by Winemaker Roman Roth's profound understanding of the vineyard. Named for a champion horse from the Wölffer Stables, Noblesse Oblige is a 10-year-old Holsteiner Warmblood.
Region Long Island, New York. Produced and bottled in Sagaponack, New York. Under Winemaker/Technical Director Roman Roth's meticulous care, Wölffer Estate Vineyard encompasses 55 acres and practices sustainable agriculture. Similar in many respects to conditions in Bordeaux, the local Bridgehampton loam soil, combined with the breeze from the Atlantic, only 2.6 miles away, provides the perfect conditions to achieve the ripeness and acidity necessary for producing Wölffer's signature style: European elegance combined with the typicity of their Long Island terroir.
Grapes 80% Chardonnay, 17% Pinot Noir, 3% Estate Selection Merlot 2003.
Style/Taste Light orange-rose in color and lots of beads of the finest bubbles. The nose is lush and full of fine toast and yeast with loads of peach, pear, strawberry, apple and hints of flintiness. The mouthfeel is seamless with an ongoing mousse from start to finish. Lovely fresh fruit is backed by creamy yeast, bright acidity and mineral notes. The wine is dry and well balanced, making it a wonderful companion to food. The finish goes on and on, revealing the ripe fruit characters of the vintage.

Harvest The grapes were carefully hand picked from 3 special lots designated for this sparkling wine. The Chardonnay was picked on October 13 and 14 from our oldest block (planted in 1988, Davis Clone 3+4) and the Pinot Noir on October 11 from our 1993 block.
Technical Data Handling and pressing of the grapes was done with whole clusters, as gently as possible. The juice was cold settled (40°F) followed by a slow fermentation that was achieved by keeping the juice at very cool temperatures (60°F) in stainless steel tanks. Malolactic fermentation was strictly avoided to keep the lively acidity. The wine was blended and aged for 11 months prior to clarification and filtration. Red wine from our finest merlot block was added before bottling to achieve an elegant pink color. It was bottled on September 17 and went through its second fermentation (Méthode Champenoise). After 38 months of aging in our dark cuvée room it was hand riddled and disgorged with a dosage of only 4.0 grams per Liter, to produce only 200 Magnum bottles.

Serving This elegant sparkling wine is an excellent accompaniment to food; a perfect match for caviar and any type of chilled shellfish, especially oysters. It also acts to refresh the palate between spoonfuls of seafood bisque or other cream-based soups. It is also the perfect toast for special occasions.
