Tasting Notes:
The color is that of bright shiney new copper. The nose is fresh fruit some apple and pear with hints of citrus and faint aromas of strawberries. The mouth-feel is vibrant and juicy with a whole array of ripe berries and playful acidity. The finish is long with very elegant skin characters and has a fine zing from the CO2 captured through the cold fermentation and the gentle handling. This is a classic dry Rose making it very food friendly.
Technical Notes:
40% Merlot, 2% Cab. Franc, 20% Cab. Sauvignon, 38% Chardonnay.
After a growing season that allowed for an especially long hang time we selected special blocks of our vineyards for our Rose. The hand harvesting started October 11th with the Chardonnay and Merlot and finished October 16 with the Cabernet Sauvignon.
The crop level varied from 2.2 tons to 3.6 tons per acre. The Red varieties stayed on the skins for only a short time (between 6 to 12 hours) to extract color and mouth-feel and were gently pressed. The Chardonnay grapes were pressed immediately. The juice for all 4 lots was well settled at 50° Fahrenheit followed by a cool fermentation temperature of 62° Fahrenheit to total dryness. Aged in stainless steel after blending, Malolactic fermentation was strictly avoided to keep the lively acidity and pure fruit characters.
2235 cases were bottled in February of 2007.
Serving Suggestions:
Serve chilled. This exciting wine is so versatile that it will match well with practically any food. It pairs especially well with hors d’oeuvres such as smoked salmon, lobster, shrimp, marinated meat, and soft cheeses. And at Thanksgiving it is the perfect match with Turkey.
