Tasting Notes: The color is of dark red brick. The aromas are of violets and lavender mixed with vanilla and fine toasted oak. The mouth-feel is lush yet spicy, bringing out the best of the Cabernet Franc grape. The wine has a wonderful balance between elegant and vibrant fruit, ripe tannins and mark characters.The finish is complex and very classic and goes on and on. Technical Notes: 91% Cabernet Franc and 9% Merlot Handpicked on the October 31st at full ripeness, the grapes were destemmed, crushed and carefully hand sorted. The fermentation took 18 days with a peak temperature on 82° during which the cap was pumped over 3 times a day every 8hr. The total maceration was 26 days. The wine stayed for 19 months in French barrels (45% new oak) in which in the first month MLF was 100% completed. There were a total of five rackings and the wine was bottled unfiltered and unfined. On the 15 of July the wine was bottled into 545 cases of 750ml and 165 cases of 375ml bottles. Serving Suggestions: A great wine for the table. Serve a little below room temperature. This wine is an excellent match with cheese or for chicken, mushroom dishes and any red meat.
