Tasting Notes:
Bright golden color. The aroma is rich and subtle. Very classic with loads of fruit, ripe apricot, pears and honey due melon with fine flintiness and fine yeast. The mouth-feel is gorgeous! Lush yet vibrant, full-bodied yet crisp and elegant. Loads of fruit are balanced by beautiful acidity and fine nutty and toasty lees characters. The oak is perfectly integrated. The finish is succulent, going on and on displaying perfect play between lush silkiness and great fresh acidity and minerality. This wine is showing our Hampton Terroir at its best. A classic Chardonnay concentrated and elegant that can age for a long time.
Technical Notes:
100% Chardonnay, Dijon Clone #76.
The growing season was warm and very sunny with ideal timings of rain, producing intense flavors, high sugars yet retaining good acidity. The lush, golden and ripe grapes got hand picked between October 24th to the 28th, followed by gentle handling and pressing. The Juice was chilled to 50° F and well settled. Barrel fermentation in French Barrique (20% new oak) was followed by natural malolactic fermentation for 3 months and finished 100%. The wine stayed surlees in the barrels for a total of 7 months with very little batonage (stirring) and was than carefully racked and blended. The bottling was done mid August of 2004 and resulted in 522 cases of 750ml bottles.
Serving Suggestions:
Don’t serve this ice cold. (Below 54 degree Fahrenheit). This is a beautiful Chardonnay that shines on its own and is perfect for rich fish dishes, creamy flavorful chicken or veal, and of course an array of cheese. Make sure you keep at least one bottle for 10 years in your cellar.
