Tasting Notes:
Dark red in color. The aroma is full of ripe fruit, vanilla and elegant smoky notes with some black chocolate. The mouth-feel is ultra-lush with a lot of ripe red fruit characters which are well balanced by great mineral notes and wonderful soft tannins. The finish is concentrated and long giving a wonderful warm sensation. This is traditionally handcrafted Merlot ready to be drunk now but with lots of great years ahead.
Technical Notes:
80% Merlot and 20% Cabernet Franc ; The Merlot fruit was hand picked between October 26th and 30th at full maturity. The Cabernet Franc was picked on October 31st. The grapes were cold macerated at 50°Fahrenheit for 5 days prior to beginning of fermentation to maximize the fruit aromas and flavors. It was tank fermented up to a temperature of 85° Fahrenheit and the pump over method was applied 3 times a day (every 8 hr) to extract color and mouthfeel. Total skin contact lasted up to 27 days. The wine was blended early to create a very balanced and lush merlot that stayed for 12 months in French barrels (25% new oak) in which in the first two and a half months MLF was completed. The wine was racked five times and was bottled unfiltered and unfined. A total of 1,223 cases were made.
Serving Suggestions:
Serve this rich, nuanced merlot at room temperature along side steak or lamb as well as with classical stews or paella.
