<div>Long Island, New York. Produced and bottled in Sagaponack, New York. Under Winemaker/Technical Director Roman Roth's meticulous care, Wölffer Estate Vineyard encompasses 55 acres and practices sustainable agriculture. Similar in many respects to conditions in Bordeaux, the local Bridgehampton loam soil, combined with the breeze from the Atlantic, only 2.6 miles away, provides the perfect conditions to achieve the ripeness and acidity necessary for producing Wölffer's signature style: European elegance combined with the typicity of their Long Island terroir. </div>

<div><strong>Style/Taste</strong> </div>
<div>Shiny golden color. Aromas of ripe pears and apricots, interlaced with vanilla and toast. The mouth-feel is lively and crisp, balanced with rich fruit, beautiful creamy yeast notes and wonderful integrated oak. The finish is vibrant and long, showing golden fruit, minerality and elegant acidity. </div>

<div><strong>Technical Data</strong> </div>
<div>The goal with this wine was to combine vibrancy and freshness with rich, ripe fruit characters in a classic style. The wine was made from 5 different chardonnay lots, each being handled in a different way. The perfectly ripened grapes were hand picked starting October 3rd and finished on October 31st. The harvest numbers were between 21 to 22.8 Brix, 7.1 to 9.6 TA and a pH between 3.36 and 3.59. The grapes were gently handled and pressed and the juice was chilled down to 50° and well settled. 42% was fermented in stainless steel, 46% in French barriques (20% new oak) and 12% in neutral French Puncheons (500 Liter barrels). Malolactic fermentation completed 45% and the wine matured sur lees for a total of 4.5 months, with very little bâtonnage (stirring of the yeast). The blending of the 5 lots was done in April resulting in 12.5% Alcohol by volume, and the wine was bottled in August 2007. 1390 cases were produced. </div>

<div>Best served slightly chilled. This wine will pair well with cheese, fish and white meat dishes.</div>
