Tasting Notes: <BR>Bright golden color. The aroma is bursting of ripe apricots, pineapple and some lime. The mouth-feel is intense yet superbly balanced. There is an explosion of fruit, lively acidity, rich sweetness and lots of lush texture. The finish has fine caramel notes and minerals and goes on and on building in intensity.<BR>This wine is made to age for 100 years.<BR><BR>Technical Notes: <BR>The wine is a blend of 79% Chardonnay, 13% Vignoles 4% Gewürztraminer and 4% Trebbiano. All the grapes were hand picked from special selected lots starting on October 4th for the Gewürztraminer and finishing on October 10th with the Chardonnay. The grapes where immediately transported to a commercial freezer in Southampton and stored at 15° Fahrenheit until November 29th. The frozen grapes where pressed, yielding a very concentrated and lush grape juice at 38 Brix, 9.0% Total Acidity and Low pH of 3.2. The juice was well settled; the fermentation was done in stainless steel and took 1.5 months at very cool temperature. Racking the wine and a first SO2 addition stopped the fermentation resulting in 9.2% Alc. by Volume and a residual Sugar of 19.5%. Malolactic fermentation was strictly avoided to keep the acidity and the pure fruit characters. The wine was filtered and bottled end of February 2005 resulting in 273 cases of 375ml and 20 bottles in Magnums.<BR> <BR>Serving Suggestions:<BR>Slightly chilled. Best with fresh fruits, fruit tarts or fruit sorbets. Also recommended is the classic pairing with Foie Gras, chocolate truffles or it can be enjoyed simply on its own. <BR> <BR> <BR></P>
