Technical Notes: 100 % Chardonnay. Hand harvested between October 7th and 28th in 7 different lots to capture the fresh fruit character. The average yield was 3.6 tons per acre.Total production: 3814 cases of 750ml bottles and 193 cases of 375ml bottled in August 2004.The fruit was immediately gently pressed and the juice was well settled at 50ºF. To highlight the vibrant fruit, 85% of the juice was tank fermented at cold temperatures (63ºF) and aged in stainless steel tanks. 15% is barrel fermented and aged for 1.5 months sur lees in new French oak barrels. The wine underwent 15% malolactic fermentation. 4,725 cases were bottled in August 2005.
Tasting Notes: Light gold in color. The nose is very aromatic showing ripe pears and some lime and Kiwi notes. The mouth-feel is light yet lush and driven by wonderful bright acidity and beautiful mineral notes. The finish is long and focused with a slight touch of creaminess and fine lees flavors. This is the perfect light summer wine not overburdened by oak or alcohol.
This wine's fresh, rich and elegant fruit flavors make it exceptionally food friendly and versatile. It pairs well with all kinds of foods -- from shellfish to red meat to Chinese and other spicy Asian dishes
