Technical
Notes: This wine is 100% Chardonnay (the clone is Dijon
#76). Hand picked on October 12th, the golden and fully-ripe
grapes were gently handled and pressed. The juice was chilled
to 50°F and allowed to completely settle. A slow barrel
fermentation in French Barrique was followed by natural malolactic
fermentation for three months. The wine stayed on its lees in
the barrels for a total of eight months and was then racked and
blended. Bottling was done in July, with a total production
of 320 cases, which were aged for two years before release.
Tasting
Notes: Bright, golden yellow in color, this is a classic
Chardonnay, graceful and harmonious in a traditional Burgundian
style. The nose shows rich, intense aromas of ripe berries
and pear. On the palate, clean, lush fruit flavors pair with
hints of butterscotch, toasted oak, and fine lees. The wine
has a full-bodied mouthfeel, balanced by bright, elegant acidity
leading into a long finish. A dry, luscious Chardonnay with
great potential for aging.
Serving
Suggestions: Serve slightly chilled. A perfect pairing
of this classic Burgundian-style Chardonnay is with veal, chicken,
or fish that have been prepared with rich sauces, enhancing the
flavors of both the wine and the food.
