Winemaker Notes

The fruit was harvested in the early morning and hand sorted by SRJC Wine Studies students. It was then loaded into a tank press for whole cluster pressing. The juice was settled and racked into French and Hungarian oak barrels where it developed a light oak bouquet and body component. Each barrel of wine was fermented separately using different yeast strains. The wine aged on its fermentation lees for five months and was stirred once a month. Once the wine completed malolatic fermentation using indigenous malo strains, it was blended and bottled unfined and unfiltered.

A cool fruit Syrah that brightly deliverers both fruit and earth. The bright fruit leads with red cherry and pomegranate and smoothes out with a rounded-meaty bacon quality. Balanced and medium bodied. Try with Lamb burgers, fillet Mignon with dark fruit and mushrooms.
